At this cozy little restaurant in Salcedo Village, Makati, you're liable to catch more than just fish
On the corner of Valero Street and V.A. Rufino in Makati City lies one-third of a triumvirate of flavors backed by Erwan Heusaff's Mothership Company. While the other two flavors veer more towards Filipino and organic items, Bait's by Chef Joseph Margate runs the more surf and turf course.
Described by Chef Joseph as a market-driven restaurant, Bait's specializes in what's currently fresh and in season. "Market-driven just means 'seasonal', but since we don't have seasons here in the Philippines, we used the term market-driven," he quips.
What does it take to get your name up on the marquee? For Chef Joseph it would be an extensive resume that began with learning the tricks of the trade at the California Culinary Academy in San Francisco and ending with a stint as the Executive Chef at Boston Liberty Hotel's famed Clink restaurant. He takes up the next part of his journey by heading back to Manila and opening Bait's.
While the restaurant may have started out as a seafood kitchen primarily, they are now adding more "turf" selections to the menu. Like the Braised Lamb Pasta, for instance, where chunks of lamb are tossed together with egg noodles that they make from scratch. The lamb is cooked just right and the egg noodles made this a heartier dish that's perfect for sharing.
